RECIPE THURSDAY

Every Thursday we will delight your palettes with delectable, tried and true recipes for various occasions direct from the kitchens on our own design team members. If you missed the first Recipe Thursday, which focused on Christmas recipes, you can find it by clicking here. Last week we shared yummy summer/picnic recipes and that can be found here! Next week we will feature “pot luck” recipes. That collection will be dual-purposed; they will be recipes that are good to take to a pot luck, and the collection itself will be a pot luck! This will be the place to find our designers’ favorite recipes that don’t fit into another category.

But this week we have recipes that are great for holidays other than Christmas, as well as any special occasion whether it be a graduation party, the annual fall trip to the apple orchard or company is in town and staying at your house.

Also, here is Bonus Sketch#3! (BTW, if you missed the first recipe album bonus sketch, you can find it here.) It’s a very fast and easy way to preserve those favorite dishes without a vacuum sealer! :D It is designed to fit into a 4″ x 6″ brag book which you can find just about anywhere. They come in limitless themes and styles, I’ve even seen them blank and with windows so you could decorate the cover yourself.

Simply start with blank 4″ x 6″ pieces of cardstock. On the left side, add a 3″ x 5″ recipe card of your recipe (which you can either purchase or print yourself) with a 3″ tab for a title, category or however you want to label it. Then on the facing page, add a 3″ x 5″ photo of your group enjoying the dish or a close-up of the dish itself, and, if desired, a short description of why this dish is special. Slip them into the sleeves and viola! Recipes that are preserved as well as your Grandma’s tomatoes. :)

This sketch could also be altered in size to fit any album you choose. Try flipping it horizontally for the next page, then vertically for the next page, and so on. Keep the same structure but alter the orientation to keep the album unified but still visually interesting!

Paper Bag Apple Pie

So yummy to make after picking apples on a crisp fall day!

Ingredients:
Pie crust
4-5 large cooking apples
1/2 cup sugar
2 tablespoons flour
1/2 teaspoon cinnamon
2 teaspoons lemon juice
1/2 cup sugar
1/2 cup flour
1/2 teaspoon cinnamon
1/2 cup butter (1 stick)

1. Roll out one 9-inch pie crust.

2. Peal and thinly slice apples. Combine 1/2 cup sugar, 2 tablespoons flour and 1/2 teaspoon cinnamon. Sprinkle over the apples and toss. Spoon into the pie crust. Drizzle with the lemon juice

3. Preheat oven to 450 degrees.

4. Combine 1/2 cup sugar, 1/2 cup flour, and 1/2 teaspoon of cinnamon. Cut in the butter until like a fine meal. Pat this over the top of the pie and slip the pie into a large paper bag. Slide it into the middle rack of the oven. Tuck the end of the bag underneath and bake 1 hour. Near the end of the baking period, slit the bag and fold back for extra browning.

Layered Fruit Trifle

This is great dessert for any occasion. You can change the kind of cake and fruit to suit whatever occasion/event you have. I have done lemon cake with strawberries and blueberries for 4th of July/Memorial Day/Labor Day, blueberry cake with peaches for a summer cookout (peaches and blueberries are really good together!), chocolate cake with cherry pie filling, chocolate cake with choc mint pudding and crushed choc mint cookies, the possibilities are endless! To make it a low-cal dessert, you can substitute Diet Cola cake (recipe below) for regular cake.

Ingredients:
pound cake (homemade or store bought- if you choose to buy one, pudding cakes are great in this)
Cool Whip
fresh or frozen fruit

Layer fruit, whipped cream and cake in a glass bowl (I use a pedestal trifle bowl). Repeat until all ingredients are used. Top with blops of whipped cream, shaved lemon rind rings, crushed cookies or chocolate shavings, if desired.

The amounts will vary depending on how much you want to make.

Diet Cola Cake

Ingredients:
boxed cake mix
(1) 12 oz. can soda pop

Mix together the cake mix and about 10 or 11 oz of the 12 oz can of soda. Omit all other ingredients. Bake as directed. It sounds bizarre, but it’s delicious! The flavor possibilities are endless!!!

Holiday Punch

Great for any holiday!

Ingredients:
4 cups cranberry juice cocktail
8 cups prepared lemonade
2 cups orange juice
1 (4 ounce) jar maraschino cherries
1 (2 liter) bottle ginger ale
1 orange, sliced in rounds

Directions:
1.In a large punch bowl, combine cranberry juice cocktail, lemonade, and orange juice. Stir in the maraschino cherries. Refrigerate for 2 hours or more.
2.When ready to serve, pour in the ginger ale. Garnish each glass with an orange slice.

Jack Murphy’s Thanksgiving Dressing

1 1/2 bags Pepperidge Farm or Brownsberry seasoned croutons (herb flavor)
1 box Uncle Ben’s Long Grain & Wild Rice (prepared)
2 eggs
1 large chopped onion
sm bunch of celery, chopped
1 can sliced water chestnuts (slightly chopped)
1 lb. Jimmy Dean pork sausage (sage flavor)
1/2 tsp. black pepper
2 cans chicken broth (Swanson’s)
1/4 lb. butter (1 stick)
1 clove of garlic (or moore)

Soak croutons in chicken broth. Saute sausage. Drain – remove from heat. Saute onions in butter. Mince and add garlic to butter and onion. Stir. Add to sausage. Chop celery – add to sausage. Saute. Add water chestnuts. Add eggs and prepared rice. Combine w/stuffing and broth. Grease dish with Pam. Bake uncovered 30 to 40 minutes at 400.

Creamy Hash Brown Casserole

I LOVE THIS RECIPE… it’s the best I’ve ever had! Perfect make-ahead breakfast or brunch for when company is staying over.

Yield: Makes 6 servings

Ingredients
1 (32-ounce) package frozen hash brown potatoes
1 (10 3/4-ounce) can fat-free cream of chicken soup
1 (8-ounce) container light sour cream
1 small onion, chopped
1 (5-ounce) can low-fat evaporated milk
1/4 cup light butter or margarine, melted
1 teaspoon dried rosemary (optional)
1/2 teaspoon salt
1/4 teaspoon pepper
Vegetable cooking spray
1 cup (4 ounces) shredded reduced-fat Cheddar cheese

Preparation
Stir together first 9 ingredients in a large bowl. Spoon mixture into an 11- x 7-inch baking dish coated with cooking spray. Sprinkle cheese evenly over top. Bake at 350° for 1 hour or until bubbly and golden. Remove from oven, and let stand 10 minutes.

Sausage and Egg Casserole with Sun-Dried Tomatoes and Mozzarella

This recipe is ALWAYS a winner. Perfect for a day-after-the-occasion celebratory brunch!

yield: Makes 8 servings

Ingredients
1 pound Italian sweet sausage, casings removed
1/2 cup chopped shallots
2 garlic cloves, minced
1/2 cup chopped drained oil-packed sun-dried tomatoes
4 tablespoons chopped fresh parsley
5 large eggs
3 large egg yolks
1 cup half and half
1 cup whipping cream
2 cups grated mozzarella cheese
1/2 teaspoon salt

Preheat oven to 375°F. Butter 13x9x2-inch glass baking dish. Sauté sausage in medium nonstick skillet over medium heat until brown and cooked through, breaking up with back of fork into small pieces, about 10 minutes. Add shallots and garlic and sauté 3 minutes. Add sun-dried tomatoes and 2 tablespoons parsley; stir 1 minute. Spread sausage mixture in prepared dish. (Can be made 1 day ahead. Cover and refrigerate.)

Whisk eggs, egg yolks, half and half, whipping cream, 1 1/2 cups cheese, and salt in large bowl to blend well. Pour egg mixture over sausage mixture in dish. Sprinkle remaining 1/2 cup cheese and 2 tablespoons parsley over. Bake until top of casserole is golden brown and knife inserted into center comes out clean, about 30 minutes. Let stand 5 minutes before serving.
