RECIPE THURSDAY

Every Thursday we will delight your palettes with delectable, tried and true recipes for various occasions direct from the kitchens on our own design team members. If you missed last week’s Recipe Thursday, which focused on Christmas recipes, you can find it by clicking here. This week we will give you some scrumptious summer/picnic recipes! The next two weeks will feature recipes for other holidays and pot luck. The last recipe collection, pot luck, will be dual-purposed. They will be recipes that are good to take to a pot luck, and the collection itself will be a pot luck! This will be the place to find our designers’ favorite recipes that don’t fit into another category.

Tips from last week’s Recipe Thursday:

Perhaps you can use some of these recipes or a collection of your own favorite recipes for a special family scrapbook! Below is bonus sketch #2!  (Click here to go to last week’s post and see the BONUS SKETCH.) You can use this sketch as the basis of a simple family recipe album. You can get half-size binders and sheet protectors at most office supply stores for a durable binder that will hold up to years of use and spills. These normally hold 5-1/2″ x 8-1/2″ paper (half a sheet of standard paper or cardstock).

Print recipes on white or colored copy paper or cardstock, cut the recipes to the desired size, mount them on a coordinating-colored half-sheet of cardstock, add a strip of patterned paper and a square at the top identifying what category your recipe would fit into. Viola! A Simple recipe book!

Perhaps you could use a different color combo for each category, or a different pattern of paper. Maybe you don’t want a working cookbook-type album, but a display album? Have traditional family recipes, favorite holiday recipes or Christmas cookies that are fixtures in your family celebrations and want to preserve them for generations to come? Simply adjust the dimensions to fit whatever display album you choose.

Caryl’s Raspberry Pie

pastry crust (double recipe)
1/2 to 3/4 cup sugar
3 tablespoons flour
5 cups fresh (or frozen, unsweetened) red raspberries

Roll out half of the pastry crust. Line a 9-inch pie plate with the pie crust.
In a large bowl, stir together sugar and flour. Add the raspberries and gently toss until coated.
Transfer berry mixtue to the pastry lined pie plate. Trim pastry to the edge of the plate. Roll out and place remaining half of pie crust on top of the filling. Seal and cut slits to vent. Crimp edge. Cover the edge of the pie with foil to prevent from burning.
Bake in a 375 degree oven for 25 minutes (Bake 50 minutes if using frozen fruit). Remove foil. Bake for another 25-30 minutes or until top is golden.

Serve with vanilla ice cream. Delish!

Everyone’s Favorite Broccoli Salad

Combine 1C mayo, 2T vinegar and 2T Equal (or other sugar substitute) in a small bowl. Set aside. In a large bowl, mix together the following ingredients: broccoli slaw (you can find it in bags in the produce section with the cole slaw mix), chopped broccoli heads, crumbled cooked bacon, chopped red onion, cubed or shredded cheese, sunflower and/or pine nuts, grape tomatoes, chopped hard-boiled egg, raisins (optional) and anything else you want! Pour the mayo mixture over all. Serve chilled.

Spinach and Avocado Summer Salad

2 bunches spinach, rinsed and torn into bite-size pieces
4 cups sliced strawberries
1 small avocado ripened
1/2 small red onion sliced very thin
1/4 cup white wine vinegar
1/2 cup white sugar
1/4 teaspoon paprika
2 tablespoons sesame seeds
1 tablespoon poppy seeds

1.In a large bowl, toss together the spinach , strawberries, avocado slices and red onion slices.
2.In a medium bowl, whisk together the oil, vinegar, sugar, paprika, sesame seeds, and poppy seeds. Pour over the spinach ,onion, avocado and strawberries, and toss to coat.
It might sound funky but yummo… you can omit onions if you like but they are great in there.

Cucumber Salad
from Liz

4 medium cucumbers, peeled and diced
1 (8 ounce) container vanilla low-fat yogurt
1 (8 ounce) container reduced-fat sour cream
1/2 cup diced onion
2 cloves garlic, minced
1 tablespoon dried dill weed
salt and pepper to taste

1.Drain cucumbers for a few minutes on paper towels. In a serving dish, stir together the yogurt, sour cream, onion, garlic, and dill. Add cucumbers, and gently mix to coat. Season with salt and pepper. Refrigerate for a couple of hours before serving for best flavor.

Who doesn’t like Corn?
Easy Corn Salad
from Liz

2 cups sweet corn
3/4 cup chopped tomato
1/2 cup chopped green pepper
1/2 cup chopped celery
1/4 cup chopped onion
1/4 cup prepared Ranch salad dressing

1.In a large salad bowl, combine vegetables; stir in dressing. Cover and refrigerate until serving.

    I have 13 so far, is that ‘close’, it doesn’t feel like it, LOL. I am still having fun playing though, thanks for giving me something to look forward to every day.

    I love these recipes, the broccolli salad brought back some memories. My grandmother used to make it every Christmas. Thanks for the flashback
